Ingredients for jollof rice:
- 3 cups of rice
- 2 cups of blended tomatoes
- 1 large onion, chopped
- 2 red bell peppers, chopped

- 3 cups of chicken broth
- 1 tablespoon of thyme
- 2 bay leaves
- 2 teaspoons of salt
- 1 teaspoon of smoked paprika

- 1/2 cup of vegetable oil
Ingredients for chicken:
- 1 kg of chicken, cut into pieces
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of paprika
- 1 teaspoon of thyme
- 1/2 cup of vegetable oil
Ingredients for salad:
- 1 head of lettuce, chopped
- 2 tomatoes, chopped
- 1 onion, chopped
- 1 cucumber, chopped
- 1/2 cup of salad dressing
Directions:
- Rinse the rice and soak it in water for 30 minutes.
- Heat the vegetable oil in a pot, add the chopped onions and fry until translucent.
- Add the blended tomatoes, chopped red bell peppers, tomato paste, thyme, bay leaves, smoked paprika, curry powder, garlic powder, ginger powder, and salt. Stir well and cook for 10 minutes.
- Add the chicken broth and bring it to a boil.
- Drain the rice and add it to the pot. Stir well and reduce the heat to low.
- Cover the pot and let the rice cook for 25-30 minutes or until it is tender and the liquid has been absorbed.
- Preheat the oven to 400°F.
- Season the chicken with salt, black pepper, paprika, and thyme.
- Heat the vegetable oil in a skillet over medium-high heat.
- Add the chicken and cook for 10 minutes or until golden brown.
- Transfer the chicken to a baking dish and bake for 20 minutes or until fully cooked.
- To make the salad, combine the chopped lettuce, tomatoes, onion, and cucumber in a bowl.
- Add the salad dressing and toss well.
