Pounded yam and vegetable soup is a delicious Nigerian dish. Here’s a recipe to prepare it:
Ingredients:
– 2 pounds yam
– Water
– Salt
– 1 bunch spinach or ugu leaves
– 2 medium onions
– 1 red bell pepper (tatashe)
– 2 scotch bonnet peppers (ata rodo)
– 2 cups stock or water
– 1 tablespoon crayfish
– 1 seasoning cube
– 1/2 cup palm oil
Instructions:
1. Peel and cut the yam into small chunks.
2. Place the yam in a pot and add enough water to cover it.
3. Add a pinch of salt and bring to a boil.
4. Cook until the yam is soft and tender.
5. Drain the water and pound the yam with a mortar and pestle until smooth.
6. While the yam is cooking, chop the spinach or ugu leaves, onions, red bell pepper, and scotch bonnet peppers and set aside.
7. In a separate pot, heat the palm oil until it is hot.
8. Add the chopped onions and sauté until they are translucent.
9. Add the chopped red bell pepper and scotch bonnet peppers and sauté for a few minutes.
10. Add the chopped spinach or ugu leaves, crayfish, seasoning cube, and stock or water.
11. Stir well and let it cook for about 10-15 minutes.
12. Serve the vegetable soup with the pounded yam.
